Superb Keto Toffee

Four ingredients, ten minutes, virtually zero sugar. A proper sweet treat that won’t kick you out of ketosis — this one disappears fast in my house.

The hardest part of low-carb living isn’t the meals — it’s the moment you fancy something sweet. This toffee solves it.

Most “keto desserts” are either a chemistry experiment with fifteen ingredients or a disappointment. This one is neither. It’s browned butter and a couple of clever sweeteners, and it tastes like the real thing — rich, buttery, properly indulgent.

Ingredients

  • 125g butter — half a block of Kerrygold unsalted
  • 2 cups powdered erythritol — use proper measuring cups
  • 1 tsp vanilla essence
  • ½ tsp stevia extract powder — optional if you can’t get it, but it rounds out the sweetness

The Method

  1. Brown the butter. Melt it on a gentle simmer until it just starts turning golden brown — this is where all the toffee flavour comes from, so don’t rush it (and don’t let it burn).
  2. Add the sweet stuff. Stir in the erythritol, vanilla and stevia.
  3. Keep stirring for about 3 minutes until it comes together into a smooth paste.
  4. Set it. Spoon onto non-stick baking paper and chill in the fridge or freezer for 5 minutes. Break into pieces and try not to eat it all at once.

Pete’s tips: erythritol can re-crystallise if overheated, so keep the hob gentle. Stored in the fridge it keeps for a week — in theory. And because erythritol and stevia have virtually no impact on blood sugar, this is about as guilt-free as toffee will ever get.
